Born and raised in Panama City, Panama, Rossy prides herself in infusing Latin American flavours into whatever she creates, making it her goal to merge some of her roots into Canadian food culture. With over 30 years under her belt, she’s currently working as a freelance chef, recipe developer, tester and food stylist in Toronto.
She’s had a hand in several CBC and Food Network TV and she has also worked as a high performance chef for The Toronto Blue Jays. She also has a line of hot sauces including the smoky “Diablo’s Fuego” hot sauce and the seasonal and sweeter “Diabla’s Kiss”.

We have been offering Toronto some of the best locally sourced craft beer, globally inspired chef created dishes and live music for 15 years. Jen has been dabbling in soapmaking for a few years and just recently took the leap of creating a business around it. She focuses on using real ingredients, while still allowing for a little fun. After graduating from University of Toronto with a masters degree she knew she wasn’t ready to walk into the corporate world just yet so she began this small business during the pandemic. I’ve been part of the hospitality industry for 16 years and am currently co-owner and head chef at Eastbound Brewery! I’ve never felt more comfortable expressing myself through food and using beer in the dishes that I create. My job can be really fun (pandemic excluded!) And I love the idea of weaving beer and food together, especially with things like spent grain.
